I can bake a decent tasting and looking sourdough loaf with an airy, open crumb interior and a thick crusty exterior; but usually, after about a day, the crust, especially the more caramelized spots of the crust, become waxy and sort of softened (even when the crumb isn't quite stale and dry yet). How can I keep this from happening? Does it have something to do with technique or ingredients or is it basically inevitable with day old sourdough? Or is there a way to keep it crusty for a couple days?
For reference, I bake a really basic loaf: 70% hydration, 30% innoculation, around 2.5% salt. I feed the starter and make a levain, leave it overnight (my kitchen is pretty cold), add the rest of the flour and water and salt to make the dough, bulk ferment around 5-6 hours stretch & folding every hour or so, shape, cold ferment overnight, bake at 250c celsius for 30 mins covered then 220c uncovered until it's the color that I like, then let rest for at least 3 hours before cutting into it.

I came across three publications recently that led me to this question: "The Political Economy of State Intervention" by Gavin Poynter (2020), "Administering The New Federalism" (1986), and "Beyond Reaganomics : the long economic crisis and the rebuilding of America, 1974-1988" (2020). I'm aware that Reagan's 1981 tax cuts were substantially reversed in 1982, and someone also pointed me to the rise of protectionism during his presidency e.g. the 1988 Omnibus Foreign Trade and Competitiveness Act, but I was wondering whether there were other, more obvious examples of state economic intervention during his presidency. I recently found out about bottles and used it to successfully install and play the RallySimFans version of Richard Burns Rally. It worked right out of the box. This was on my laptop running Debian 12 (bookworm, currently testing).
I also wanted to try the same on a Windows machine running a Debian Linux 11 (bullseye, currently stable) VM using VMware Workstation Player 15. Now since it's a VM there is only a virtual video card adapter. I was able to successfully install Richard Burns Rally using bottles on my current Debian VM but I cannot get the game to start. When starting bottles I get

and whenever I try to start the game the game window appears but I get two error messages.

Now I was going to post this in the bottles forum but then I tried running Dig or Die using Steam and Proton and it failed with the error

Make sure you have at least DirectX 9.0c installed, have drivers for your graphics card and have not disabled 3D acceleration in display settings.
I can play some not very demanding games that have a native Linux version so something like that actually works (e.g. I played Streets of Rogue, Mount & Blade Warband etc.).
To do some further tests I downloaded raft from itch.io (some early version probably).
I could start the Windows 32-bit version using wine with no problems. There appeared a few errors in the console but the game started.
I could also start the Windows 64-bit version using 64-bit. It's a 3D-accelerated game and runs only at a few FPS but it runs.
Weirdly enough I could not start the Linux version of raft because it said "There is no data folder" although the folder was inside the directory with the executables but what are you gonna do...
So my question is: is it actually possible to run something using wine inside a (VMware) VM? If yes, is there something I need to look out for? Somehow I get the feeling that it doesn't always properly recognise the video card and complains about lack of memory and directx. Something like Raft did work, though.

I've seen a few posts from those who've left accounting for something completely different (e.g. animal rescue); but has anyone done a change to something that is somewhat still related to accounting?
Background is I'm now 38, I used to go full on for the career but recently realised it's completely meaningless. I'm pretty well paid and just started a Head of Group Reporting role for an international brand but I still find the new job meaningless and am thinking of leaving for something that might still use some of the skills I've honed for years.
I've always been interested in analysis and trading but the pressure cooker at investment banks don't interest me.
